"Making Banana Pancakes"You know that song? One of my absolute favorites by Jack Johnson. Whenever I listen to it, I'm always put in a good mood. It makes me feel like it's a slow Sunday morning, when you stay in your pjs most of the day and it's a little rainy outside. Mm! Today, I want to share with you my recipe for banana pancakes- a gluten-free, two (to four) ingredient pancake recipe using mainly a banana and an egg! These guys are SO delicious. Fluffy. Moist. Sweet. Warm. YUMMY. And for all of you who can't eat gluten (moi included), these are completely gluten-free. It doesn't get any better! I like to add in a dash of cinnamon and a 1/4 tsp of vanilla bean extract to give it a kick. Add your favorite toppings to personalize them! I love to add some greek yogurt dollops, but they would be delicious with nuts, nut butters, chocolate chips, sprinkles (someone's birthday is next month...*cough* *cough*), etc. Check out the recipe below!
